Sweet and White Potatoes with Cilantro Cream

Ingredients

medium baking potatoes (1 1/2 pounds)

medium sweet potatoes or yams (1 1/2 pounds)

tablespoons margarine or butter, melted

teaspoon salt
1
container (8 ounces) sour cream
2
tablespoons chopped fresh chives
1
tablespoon finely chopped cilantro
1
tablespoon lime juice
1
small green chili, seeded and finely chopped (1 tablespoon)

Directions

  1. 1 Heat oven to 400º. Grease rectangular baking dish, 11x7x1 1/2 inches.
  2. 2 Peel baking potatoes and sweet potatoes; cut into 1/4-inch slices. Spread potatoes in baking dish. Drizzle with margarine, and sprinkle with salt; stir to coat.
  3. 3 Cover and bake about 45 minutes or until potatoes are tender.
  4. 4 Mix remaining ingredients. Spoon sour cream mixture over potatoes. Bake uncovered 5 minutes.
