Ingredients

cup uncooked regular long-grain white rice

cup water

(5-oz.) pkg. frozen cooked small shrimp, thawed

green onions, thinly sliced

teaspoon crushed red pepper flakes

tablespoon hoisin sauce

small Bibb or iceberg lettuce leaves, washed, dried*

Directions

  1. 1 In small saucepan, bring rice and water to a boil over medium-high heat. Reduce heat; cover and simmer 15 to 18 minutes or until rice is tender and water is absorbed.
  2. 2 Add all remaining ingredients except lettuce leaves to rice; remove from heat. Keep warm until serving time.
  3. 3 To serve, spoon filling onto center of serving platter; place lettuce leaves around edge. Have guests spoon about 2 tablespoons filling onto 1 lettuce leaf; fold or roll leaf around filling. If desired, serve bundles with dipping sauces such as hoisin sauce or sweet-and-sour sauce.
