Sweet and Spicy Meat and Potato Loaves

Ingredients

SAUCE

(8-oz.) can (3/4 cup) jellied cranberry sauce
1/4
cup chili or barbecue sauce

tablespoons lemon juice

teaspoon dry mustard

MEAT LOAVES

1
lb. extra-lean ground beef
2
cups refrigerated shredded hash-brown potatoes (from 1 (20-oz.) pkg.)
1/2
cup finely chopped onion
2
egg whites
1
teaspoon Worcestershire sauce
1/2
teaspoon ground sage

Directions

  1. 1 Heat oven to 400°F. Place roasting rack in shallow pan; spray rack with nonstick cooking spray.*
  2. 2 In small bowl, combine all sauce ingredients; beat with wire whisk until smooth.
  3. 3 In large bowl, combine all meat loaf ingredients and 1/4 cup of the sauce; mix well. Shape mixture into 6 oval loaves, about 3/4 inch thick; place on sprayed rack in pan. Spoon about 1 teaspoon sauce over each loaf.
  4. 4 Bake at 400°F. for 15 minutes. Spoon an additional 1 teaspoon sauce over each loaf. Bake an additional 15 minutes or until no longer pink in center. Serve with remaining sauce.
