Sweet and Spicy Chicken with Winter Fruit Salsa

Ingredients

Salsa

cup chopped red bell pepper

seedless orange, peeled, chopped

small pear, unpeeled, chopped

tablespoons chopped fresh cilantro

tablespoons orange juice

Glaze

cup honey

chipotle chile in adobo sauce (from 11-oz. can), finely chopped

tablespoons adobo sauce from chipotle chile can

Chicken

boneless skinless chicken breast halves
  • 1 In medium bowl, combine all salsa ingredients; mix well. Set aside.
  • 2 In small bowl, combine all glaze ingredients; mix well. Reserve 1 tablespoon glaze. Brush half of remaining glaze over 1 side of each chicken breast half; place on broiler pan, glaze side up.
  • 3 Broil 4 to 6 inches from heat for 6 minutes. Turn chicken; brush with remaining glaze. Cook an additional 4 to 7 minutes or until chicken is fork-tender and juices run clear. Drizzle chicken with reserved 1 tablespoon glaze. To serve, spoon salsa over chicken.
