Ingredients

: Pillsbury Sugarfree Yellow Cake Mix (prepared according to box with oil, eggs, and water)

2: cups Carrots (4-6 medium) shredded

1: cup Raisins (soak in warm water to plump)

1: cup Chopped Walnuts

2: tsp Cinnamon

1/2: tsp Nutmeg

1 1/2: cup Cream Cheese

3: Tbsp Butter

2: Tsp Vanilla

3-4: Tbsp Milk

5: Tbsp Splenda

Directions

1 Preheat oven to 350 degrees. Mix Pillsbury Sugarfree yellow cake mix according to directions on box.
2 Add Cinnamon, Nutmeg, Walnuts, and Carrots. Drain and add Raisins to mixture. Mix together with wooden spoon or spatula.
3 Grease and flour two 9 inch cake pans. Pour cake mixture into pans.
4 Bake for 40-45 minutes until cake springs back.
5 Prepare Cream Cheese Frosting while cake is cooling.
6 Mix room temperature Cream Cheese and Butter with electric mixer until creamy.
7 Add Splenda, vanilla. Mix. Add milk as needed until frosting is speading consistency.
8 Frost cooled cake and serve!!

I made this carrot cake for a relative's birthday surprise. He became diabetic a few years ago. He loved carrot cake, but do to the amount of sugar in a regular one he couldn't eat it. We all enjoyed this recipe very much and want to thank gggibert for sharing this version. It was a great surprise ans he said the best birthday surprise ever. I plan on making it often.
