For the streusel I didn't havc oats in the house so I used one packet of Cinnamon and Spice Instant Oatmeal from Quaker Oats. It turned out fantastic and my son said it was the best pumpkin pie he ever ate! :)

The first time I made this, I had lots of extra filling left, so I froze it. I doubled the topping. The pies seemed to take forever, and still weren't done, even after an extra 30-45 minutes. The pie seemed to thicken when chilled, but not at warm serving temp. The second time around, I switched to Eagle brand sweetened condensed milk. I still had to bake longer, but they were firm, when they came out. The topping is so good, it should be doubled. I think it keeps some of moisture from escaping, hence the longer baking time. I let it bake longer, before I added the topping, the second time. I wonder if I should add less sugar, because of the Eagle Brand, but it seemed fine. Everyone just raved. I smothered mine in whipped cream, not that measely dollop like the picture. lol. I think I'll make one for each of my neighbors for Christmas gifts.

I have made this pie every year for Thanksgiving for the last 4 years and it is always a huge hit, people love it. Deffanitly double the topping though it makes the pie soooo yummy.

I've made this pie twice already, and am making it again to bring to my grandmothers for Thanksgiving. This pie is DELICIOUS....especially when you double the amount for the streusel topping--it's the BEST PART! Definitely something to try!

This was a real hit. I did let the pie cool completely before I put the topping on it and then put it back in the oven & cooked it. It worked better that way.
