Directions

  • 1 Cook pasta as directed on package. Drain; rinse with cold water to cool. Drain well.
  • 2 Meanwhile, in large bowl, combine all remaining salad ingredients except strawberries and lettuce.
  • 3 In blender container or food processor bowl with metal blade, combine sugar, onion, salt, lemon juice and mustard. Cover; blend until well mixed. With machine running, add oil in slow, steady stream, blending until dressing is thick and smooth. Add poppy seed; pulse a few times to mix.
  • 4 Add pasta to salad; stir gently to mix. Add dressing; toss to mix.
  • 5 Just before serving, gently stir strawberries into salad. Serve immediately so strawberries do not discolor dressing. Arrange lettuce on serving platter. Spoon salad over lettuce.

Expert Tips

Several restaurants offer a salad similar to this recipe; this version is easy to make at home.

Roasted salted nuts are wonderful in poultry salads; try almonds or cashews here.

Garnish the salad platter with whole strawberries.

Blue cheese is a nice contrast to rich walnuts, and sweet dressing and strawberries. Offer a small bowl of blue cheese on the side to sprinkle on the salad for the blue cheese lovers.
