I purchased the Wilton mini alphabet cookie cutters from Michael's to make these. These little cookie cutters worked perfectly! I baked them and put them right into the fridge to be served the next morning. In the morning I heated them in a 200 degree oven for about 15 minutes and they turned out great! My suggestion would be to cut your pie crust into smaller pieces so you can get more pockets.

I haven't made these yet and I was wondering if you could freeze them prior to baking , to bake later?
