I have made these before several times for my customers. I am an in-home baker/caterer/crafter (www.nanas-sweets.com). I have omitted the coconut on different occasions and replaced with different extracts. I have used raspberry and lemon extracts. I have used crushed graham crackers without any problem at all. You do not need to use the coconut, but make sure you use some flavoring of sorts.

Try graham cracker crumbs, crushed cookies, crushed nuts or some left over cake. Adjust the amounts so that the mixture is pliable, but will still mold around the strawberry before freezing.

I do not like coconut. Can it be omitted or substituted?

What can you change the coconut for. I don't like the taste of them and would love to make that but would like to change the coconut.
