Steaks with Chipotle Guacamole

Ingredients

  • 1 ripe avocado, pitted, peeled
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic salt
  • 1 small chipotle chile in adobo sauce (from 7 or 11-oz. can), chopped
  • 4 (8-oz.) beef top loin steaks (New York, Kansas City or strip steaks)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

    Heat gas or charcoal grill. To make chipotle guacamole, mash avocado in medium bowl with fork. Add cumin, garlic salt and chile; mix well.

    When grill is heated, sprinkle both sides of beef steaks with salt and pepper; place on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 8 to 10 minutes or until of desired doneness, turning once. Serve steaks with chipotle guacamole.

  • Chipotle chilies are dried smoked jalapeños. Look for chipotle chiles in adobo sauce with other canned Mexican foods at the supermarket.
  • We recommend not making this guacamole ahead of time as it discolors when exposed to air.
  • To broil steaks, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.
