With 3-inch star-shaped cookie cutter, or paper pattern as a guide and small sharp knife, cut opening in top of red wax coating of Gouda cheese. Carefully spoon out cheese, leaving wax coating intact to form shell.
In food processor bowl with metal blade, combine Gouda cheese, cream cheese and chutney; process until smooth. Stir in green onions.
Spoon half of mixture into wax shell, mounding in center. Refrigerate remaining cheese mixture; refill wax shell as needed. Serve with assorted crackers. To give as gift, wrap cheese-filled wax shell in decorative cellophane and tie with bow. Store in refrigerator.
