These are great cupcakes. The first time I tried to make the icing I heated up the marshmallow as the recipe suggests. When i combined it with the heavy cream it clumped up and got greasy. I threw this icing away. The second time around I just whipped the cream and added the marshmallow. This worked great. my suggestion would be to not heat up the marshmallow.

My neighbor had a huge July 4th cookout(about 100 people) I brought the Red,White and Blue cupcakes. I made them the day before and I frosted them just before I brought them to the cookout. They were a huge success with everyone. I had to go back home to get the recipe for most of the women.They were gone in no time. thanks for the recipe=Gloria

I just made this recipe for 4th of July and were a hit! Everyone had to have more than one. I will definitely make these cupcakes again. I would recommend making 2 batches (48 count) since they went so fast. Or in the alternative, make a big cake out of it. It''s that good! I would recommend that if you''re making these cupcakes that you pick small strawberries so that the 5 pieces fit on the small cupcake. I used bigger strawberries and only 3 slices fit on one. You gotta try these!

I made these for our party last weekend. Everyone couldn''t beleive that I made them. My wife does most of the cooking and baking but, I like to show off once in awhile. These cupcakes are easy to make. It helps if after you slice the strawberries to put them sliced side down on some paper towels to let them drain. I will make these again.

I had a terrible time with these cupcakes. The whipping cream was doing fine until I added the marshmallow cream and then it liquidified. So the frosting went down the drain. I used white cake frosting instead. The strawberry slices slid off the cupcakes and the juice collected on the bottom of the container. The few that stayed together looked great. The strawberries and blueberries came off the rest and we will just eat the cupcakes plain. At least there were enough of the pretty ones to take to the potluck.
