These quick chicken fajita boats are a fun take on traditional fajitas and are easy to make!

package (20 oz) Old El Paso™ frozen chicken fajitas
1
can (16 oz) Old El Paso™ traditional refried beans
1
package (8 oz) Old El Paso™ heat & serve Mexican rice, if desired

Old El Paso™ Taco Boats™ Soft Flour Tortillas
Fresh toppings, as desired (tomatoes, cilantro, green onions, avocado, jalapeños, lettuce, shredded cheese)

Steps

  • 1 Make chicken fajitas as directed on package.
  • 2 Meanwhile, heat refried beans as directed on can.
  • 3 Heat rice as directed on package.
  • 4 Heat tortillas as directed on package. Divide refried beans equally among tortillas. Top refried beans with chicken fajitas and then with fresh toppings. Serve immediately with rice.

The tortilla boats hold the fajita ingredients perfectly--portable and makes for less messy eating!

Don't care for refried beans in your fajita boat? They're great to eat as a side dish as well. Just top with a little shredded cheese or sliced green onions before serving.
