I prepared this last night for my "bonco" group and they absolutely loved it! I did not use the entire box of spinach, only half, and that was sufficient for flavor/color. Most definitely will make it again.

Not only does this recipe make quiche really easy and not at all intimidating, but it's beautiful with its colorful layers. The tomatoes are important, adding an acid note to the cheese, egg, spinach, and sausage.

Awesome Receipe!! Great blend of ingredients. I especially like how the smoked sausage taste compliments the egg and cheese flavors. So delicious, yet so quick and easy to make with a very pleasing texture and appetizing appearance. Perfect for sharing with family, friends or guests, not only for breakfast, but anytime! A TRUE WINNER!!!

This recipe suggests feta cheese, which I would definately make it that way. I don't think it would taste as well with the cheddar cheese as the recipe calls for. I would vote for using the feta. Sounds great otherwise..
