Spinach Pierogi Pizza

can (13.8 oz) Pillsbury™ refrigerated classic pizza crust

box (9 oz) frozen spinach in a pouch, thawed, squeezed to drain
1/2
cup chopped onion

tablespoons butter or margarine
1 1/2
cups mashed potatoes

tablespoons oil
1/2
teaspoon garlic salt
1
cup shredded mozzarella cheese (4 oz)
1/2
cup shredded Cheddar cheese (2 oz)
1
small onion, sliced, separated into rings

Directions

  1. 1 Heat oven to 425°F. Grease 13x9-inch pan with shortening. Unroll dough; place in pan. Starting at center, press out dough to edge of pan. Bake 8 to 10 minutes or until light golden brown.
  2. 2 Meanwhile, in 10-inch skillet, cook spinach and chopped onion in butter until onion is crisp-tender. Stir in potatoes; mix well. In small bowl, combine oil and garlic salt; mix well. Brush over partially baked crust; top with spinach mixture. Sprinkle with mozzarella cheese and then Cheddar cheese. Top with onion rings.
  3. 3 Bake 15 to 20 minutes or until edges of crust are golden brown and cheese is melted.
