Spinach Pesto Manicotti

oz. uncooked manicotti

lb. extra-lean ground beef
1
(9-oz.) pkg. Green Giant® frozen chopped spinach, thawed, squeezed to drain and chopped
4
oz. mozzarella cheese, diced (about 1 cup)
1/2
cup purchased pesto
1
egg
1
(26 to 28-oz.) jar tomato pasta sauce

  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Cook manicotti to desired doneness as directed on package. Drain; rinse with cold water to cool. Drain well.
  • 2 Meanwhile, in large bowl, combine ground beef, spinach, cheese, pesto and egg. If desired, add salt and pepper; mix well. For easier stuffing, place beef mixture in resealable freezer plastic bag; seal bag. Cut about 1-inch hole in bottom corner of bag.
  • 3 Fill each manicotti by squeezing beef mixture into manicotti; place in sprayed baking dish. Pour pasta sauce over manicotti. Cover with foil.
  • 4 Bake at 400°F. for 30 to 40 minutes or until filling is no longer pink in center.

Loved it! Simple to make and so very good! Only suggestion is I ended up stuffing with my fingers. I found it difficult to hold the pasta with one hand and squeeze the mixture from the bag with another, it was slippery and frustrating. I used my fingers tho and that worked fine. Iw as delicious, I served it with garlic bread! Yummy!

My husband "LOVED" this recipe. I loved it as it was so very simple to make. Smells and presents so beautifully. The bag tip didn't work for me...But cooking the manicotti al dente made it very easy to stuff. Try this, you'll love it! My son, who is very picky ate it and loved it too. (I just didn't tell him there was spinach in it!)

I have made this manicotti quite a few times and just love it. I am also passong this on to my aunt who has asked for a good stuffed manicotti recipe.
