Spinach and Pear Salad

Heartier salads are appreciated in winter. Here, radicchio and spinach showcase a pleasing combination of pears, walnuts and feta cheese.

Ingredients

  • 4 firm ripe pears
  • 1/3 cup fresh lime juice
  • 1 teaspoon grated lime peel
  • 1/3 cup honey
  • 3 tablespoons olive or vegetable oil
  • 1/8 teaspoon pepper
  • 4 cups torn fresh spinach
  • 3/4 cup torn radicchio
  • 1/2 cup coarsely chopped walnuts
  • 4 oz. (1 cup) crumbled feta cheese

Steps

    Core each pear and cut lengthwise into 8 wedges. Toss with 1 tablespoon of the lime juice to prevent browning.

    In small jar with tight-fitting lid, combine remaining lime juice, lime peel, honey, oil and pepper; shake well.

    Arrange spinach and radicchio on individual salad plates. Fan 4 pear wedges on each plate. Sprinkle with walnuts and cheese. Spoon dressing over salads.

    Radicchio, an Italian specialty, is no longer rare in U.S. supermarkets, but it's still pricey. Fortunately, you don't need much to add color and flavor impact to a salad. Radicchio resembles a small, softball-sized head of cabbage, with beautiful varigated leaves that range from deep ruby-purple to white. Its strong, slightly bitter flavor makes it an ideal accent in most salads, rather than being the main ingredient.
