1: small onion, chopped

2: garlic cloves, minced

3: cups fresh spinach leaves

2: oz. (1/2 cup) crumbled feta cheese

1: (2-lb.) turkey breast half

2: tablespoons orange marmalade

Directions

1 GRILL DIRECTIONS: Prepare grill for cooking with indirect heat. Heat grill to medium heat. In small skillet, heat oil over medium heat until hot. Add onion and garlic; cook 3 to 4 minutes or until lightly browned. Remove skillet from heat. With slotted spoon, remove onion and garlic; place in medium bowl. Add spinach and cheese to onion mixture; mix well.
2 Lift skin from thin side of turkey breast; carefully tuck spinach mixture into cavity under skin. Secure with toothpicks. Add marmalade to remaining oil in skillet; mix well.
3 When ready to grill, place drip pan in center of grill with gas heat or charcoal at edges. Place turkey breast, skin side up, on grill rack directly over drip pan; cover grill. Cook 1 to 1 1/2 hours or until turkey is fork-tender and juices run clear, brushing occasionally with marmalade mixture during last half of cooking time.
4 Remove turkey from grill; cover with foil. Let stand 10 minutes before carving.

To roast turkey in oven, place in uncovered shallow roasting pan; bake at 375°F. for 1 1/2 to 2 hours, brushing occasionally with marmalade mixture.

When grilling, maintain the heat throughout the cooking time. After filling the grill with hot coals, light more coals in a charcoal starter so you have extra to add when heat goes down. Or add 8 to 10 coals to the hot coals in the grill just before putting on the turkey.

Reduce grilling time by microwaving the stuffed turkey breast on HIGH for about 10 minutes before immediately placing it on the grill. To complete cooking, grill the microwaved turkey breast for 10 to 20 minutes.
