Loved the idea behind this recipe but wanted to simplify. Purchased block feta with basil tomato [Athenos brand] and cut up into small 1-1/2 chunks. Placed cream cheese in food processor whirled until fairly smooth, added garlic salt and feta chunks, pulsed some more. Meantime took 9 oz. fresh spinach, sprinkled with a bit of water and microwaved for approx 2 1/2 - 3 minutes until wilted. Drained and added to cream cheese feta mixture in processor. Pulsed and added roughly 1/4-1/3 cup onto each open faced tortilla, covered with another and placed in quesadilla maker. Certainly a skillet would do if you don't have this little gadget. Heated approx 3-4 minutes or 2 minutes per side. Continue until all filling was used up. Froze individual quesas in aluminum foil. Very tasty dish that could easily be used as an appetizer or lunch.
