FANTASTIC!!! We really love this! We serve it with some Mexican rice and it's a great dinner! I can usually get my 4 year old to eat about half an enchilada before she realizes there's "plants and leaves" in it! :) One hint.....watch the cans of enchilada sauce. The first time we made this recipe, it was fantastic! The 2nd time it was too spicy - then we found the can and realized we'd bought hot flavor (but the heat rating was kind of "hidden" on the can). Enjoy!! :)

Definitely a winner! We LOVED everything about this dish, and I'll be making it often! Changed only two things.. added 3 cloves of fresh garlic when browning beef and onions, then used plain pepper instead of garlic pepper, also added some salt. Next time I'll double the enchilada sauce and serve the salsa on the side, and I think I'll try a Mexican cheese blend instead of Colby-Jack.
