Spicy Tofu, Cheese and Green Chile Enchiladas

Ingredients

(10.5-oz.) pkg. extra-firm lite tofu, cut into small cubes*

oz. (1/2 cup) shredded mozzarella cheese

(4.5-oz.) can chopped green chiles
1/4
cup taco sauce
6
(7- or 8-inch) flour tortillas
1
(10-oz.) can enchilada sauce
1
to 2 tablespoons sliced ripe olives, if desired

Directions

  1. 1 Heat oven to 425°F. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray. In medium bowl, combine tofu, cheese, chiles and taco sauce; mash and mix until well combined. Spoon mixture evenly onto tortillas; roll up. Place seam side down in sprayed baking dish. Top with enchilada sauce.
  2. 2 Bake at 425°F. for 15 to 20 minutes or until bubbly and lightly browned. Sprinkle with olives.
