Heat oven to 425°F. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray. In medium bowl, combine tofu, cheese, chiles and taco sauce; mash and mix until well combined. Spoon mixture evenly onto tortillas; roll up. Place seam side down in sprayed baking dish. Top with enchilada sauce.
Bake at 425°F. for 15 to 20 minutes or until bubbly and lightly browned. Sprinkle with olives.
