In 10-inch nonstick skillet, heat oil over medium-high heat until hot. Cook and stir turkey in oil 2 to 3 minutes or until no longer pink. Reduce heat to medium-low; add vegetables. Cover; cook 5 to 8 minutes or until vegetables are crisp-tender, stirring occasionally.
Stir in Szechuan sauce; cook and stir 2 to 3 minutes or until hot.
