Ingredients

Spicy Mayonnaise

1/4
cup mayonnaise
1
tablespoon Sriracha sauce
1
teaspoon lime juice
1/4
teaspoon soy sauce

Burgers

1
lb lean (at least 80%) ground beef
2
tablespoons Sriracha sauce
2
tablespoons soy sauce
4
to 8 slices pepper Jack cheese
4
hamburger buns, split
1/4
cup pickled sliced jalapeño chiles

  • 1 Heat gas or charcoal grill. In small bowl, mix mayonnaise, 1 tablespoon Sriracha sauce, the lime juice and 1/4 teaspoon soy sauce until well blended. Refrigerate until serving time.
  • 2 In large bowl, mix beef, 2 tablespoons Sriracha sauce and 2 tablespoons soy sauce. Shape mixture into 4 patties, about 1/2 inch thick.
  • 3 Place patties on grill over medium heat. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Top each burger with 1 to 2 cheese slices. Cover; cook 1 minute longer or until cheese is melted.
  • 4 Spread cut sides of buns with spicy mayonnaise. Place burgers on bun bottoms; top with jalapeños. Cover with bun tops.

Expert Tips

Toast the hamburger buns, if desired. Place cut sides down on the grill when adding the cheese to the burgers.

Reduce the heat a bit by substituting slices of Colby-Monterey Jack cheese blend for the pepper Jack.

Look for pickled jalapeños near the other green chiles with Mexican foods, or in the pickle/olive aisle; and look for Sriracha sauce in the Asian foods section.
