Ingredients

1: cup thinly sliced, halved onion (1 large)

1: cup shredded carrots

1 1/2: teaspoons lemon pepper

1/4: teaspoon crushed red pepper flakes

1: can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce

6: oz frozen cooked deveined peeled small shrimp

1/2: cup chopped green and ripe olives, if desired

Directions

1 In 10-inch skillet, heat 1 tablespoon vegetable oil over medium-high heat until hot. Cook onion and carrots in oil 3 to 5 minutes or until softened. Sprinkle with lemon pepper and pepper flakes. Pour cooking sauce over all. Cover and steam 10 minutes, adding frozen shrimp last 3 minutes. Top with olives.
2 Serve sauce with shrimp. Sauce is also great over rice.
