We eat really spicy food & this wasn't as spicy as I expected. Leftovers are great. Almost like a broccoli & cheddar soup but with the addition of cauliflower & carrots. My husband even liked it and he doesn't like carrots!

My whole family loves this and I've passed the recipe on to friends. I doubled the recipe and added 1 lb more of the vegetables and a little garlic to it. I cooked the vegs longer because we like them tender. So easy but doesn't taste like it. Leftovers were just as good the next day. Definitely will be one of our favorites.

For more flavor and comforting appeal use regular chicken broth instead of fat free low sodium, half and half instead of skim milk and pepper jack cheese instead of Mexican cheese product.
