Very quick & easy to make. I served it with tortillas to make mini burritos. Even the husband liked it & he was skeptical at first.

This is easy and awesome! I used a frozen bell pepper and onion mix which cut down on prep time even more. Can use the whole grain couscous for added nutritional benefit too!
