Spicy Black Bean Chili

Ingredients

  • 1 cup chopped onions
  • 1 (15-oz.) can southwestern-style black beans with cumin and chili spices, undrained
  • 1 (14.5-oz.) can diced peeled tomatoes with chili or salsa seasonings, undrained
  • 1 (11-oz.) can whole kernel corn, red and green peppers
  • 4 oz. (1 cup) shredded Cheddar cheese

    Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add onions; cook and stir until tender.

    Stir in beans, tomatoes and corn. Bring to a boil. Reduce heat to low; simmer 5 to 8 minutes or until thoroughly heated.

    Sprinkle with cheese; cover and cook an additional 1 to 2 minutes or until cheese is melted.

  • Sometimes called turtle beans, black beans, are popular in dishes from Mexico, Central America, South America and the Caribbean. Their skins are black, their insides are cream-colored, and their flavor is slightly sweet.
  • Look for the south-western-style black beans and the diced tomatoes with chili or salsa seasoning in the Mexican food section of the supermarket.
  • If the black beans are not available, spicy chili beans can be substituted.
  • Top each serving with chopped fresh tomatoes, cilantro, guacamole, sour cream and/or salsa.
