Expert Tips

Sometimes called turtle beans, black beans, are popular in dishes from Mexico, Central America, South America and the Caribbean. Their skins are black, their insides are cream-colored, and their flavor is slightly sweet.

Look for the south-western-style black beans and the diced tomatoes with chili or salsa seasoning in the Mexican food section of the supermarket.

If the black beans are not available, spicy chili beans can be substituted.

Top each serving with chopped fresh tomatoes, cilantro, guacamole, sour cream and/or salsa.
