cups cooked rice (cooked as directed on package)

lb. boneless, skinless chicken breasts and thighs, cut into 1-inch pieces

cups chopped onions

garlic cloves, minced

(28-oz.) can whole tomatoes, undrained, cut up

cup creamy peanut butter
1/2
teaspoon chili powder
1/2
teaspoon salt
1/4
teaspoon crushed red pepper flakes

cup chopped dry roasted peanuts (unsalted if desired)

Steps

  • 1 Heat oil in Dutch oven or large saucepan over medium-high heat until hot. Add chicken, onions and garlic; cook and stir 5 minutes or until chicken is browned and onions are tender.
  • 2 Stir in tomatoes, peanut butter, chili powder, salt and red pepper flakes. Bring to a boil. Reduce heat; cover and simmer 35 minutes. Serve over rice; sprinkle with peanuts.
