Spiced Pear Chutney

Ingredients

cup firmly packed brown sugar

cup cider vinegar

firm large pears (1 1/2 lb.), cored, chopped

cup chopped onion

cup chopped red bell pepper
1/4
cup golden or dark raisins

tablespoon grated gingerroot
1/2
teaspoon cinnamon
1/2
teaspoon coriander
  • 1 In large saucepan, combine brown sugar and vinegar; mix well. Bring to a boil. Reduce heat; simmer 10 minutes.
  • 2 Stir in all remaining ingredients. Return to a boil. Reduce heat; simmer 45 minutes or until thickened, stirring occasionally. Cool slightly. Refrigerate at least 3 hours or until chilled.
  • 3 Spoon into serving bowl or jar; cover tightly with foil or lid. Store in refrigerator for up to 2 weeks.
