Ingredients

  • 3/4 cup firmly packed brown sugar
  • 3/4 cup cider vinegar
  • 3 firm large pears (1 1/2 lb.), cored, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup golden or dark raisins
  • 1 tablespoon grated gingerroot
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon coriander

Steps

    In large saucepan, combine brown sugar and vinegar; mix well. Bring to a boil. Reduce heat; simmer 10 minutes.

    Stir in all remaining ingredients. Return to a boil. Reduce heat; simmer 45 minutes or until thickened, stirring occasionally. Cool slightly. Refrigerate at least 3 hours or until chilled.

    Spoon into serving bowl or jar; cover tightly with foil or lid. Store in refrigerator for up to 2 weeks.
