Usually I make Spanish Rice out of box. I loved making this "fresher" salad though. Good both hot and warm. I ended up using a red pepper vs. a green pepper. If you want an extra kick- use a hotter salsa. Next time I would just mix in the cilantro in with it. Makes enough to feed a crowd. I bet it could be a main meal if you added black beans to it.

This salad is amazing. It has just the right amount of flavoring and crunch to it. I made it for a pot luck lunch for work and all the employees were asking for the recipe. I suggest you try this great and tasteful recipe.
