Spaghetti Sauce

A delicious chicken spaghetti sauce that is great with rigatoni pasta, Italian green salad and Pillsbury crusty french bread.

Ingredients

tablespoon olive oil
2
carrots, peeled and chopped fine
2
celery stalks, chopped fine
1
large yellow onion, chopped fine
1
lb. boneless, skinless chicken thighs
2
large garlic cloves, minced
1
(14.5oz.) can stewed tomatoes
2
cans (8oz. each) tomato sauce
1
tablespoon dried parsley
1
teaspoon salt
1/2
teaspoon ground black pepper
1
tablespoon Italian seasoning
10
whole cloves (about 2 teaspoons)
1
whole bay leaf
1
cup dry red wine

  • 1 In a large Dutch oven over medium-high heat, heat olive oil. Add chicken and brown for 2 minutes on each side. Add carrots, celery and onions. Saute for 5 minutes.
  • 2 Add garlic, stewed tomatoes, tomato sauce, parsley, salt, pepper, Italian seasonings, cloves and bay leaf. Bring to a boil and then turn down to low heat. Cover and simmer for 1 hour. Add wine and continue to cook for 1 more hour.
  • 3 Serve over rigatoni or favorite pasta.
