Add something spicy to your family’s Southwestern night! Serve this tasty casserole dinner made using pork, pasta and beans.

Ingredients

  • 1 lb. lean ground beef
  • 7 oz. (2 cups) uncooked wagon wheel pasta
  • 2 cups water
  • 1 (15-oz.) can spicy chili beans, undrained
  • 1 (8-oz.) jar jalapeño pasteurized process cheese sauce

Steps

    Heat oven to 350°F. Spray 2-quart casserole with nonstick cooking spray.

    In large saucepan, brown ground beef until thoroughly cooked, stirring frequently. Drain. Stir in all remaining ingredients. Cook until thoroughly heated. Spoon mixture into sprayed casserole. Cover tightly.

    Bake at 350°F. for 35 to 40 minutes or until pasta is tender and sauce is bubbly.

    Decorate this casserole with a dollop of sour cream, sliced green onions and chopped avocado. For more color, add a sprinkling of chopped red bell pepper or pimientos.

    Wagon wheel pasta lends an Old West feel to this recipe, but any similar-sized pasta will work.

    Plain pasteurized cheese product can be used in place of the jalapeño-flavored variety.
