My husband and I just had this and it was delicious! I didn't use Mexi-corn because, quite frankly, I forgot it at the store. And I used straight monterey jack cheese because, quite frankly, I didn't pay attention to the recipe. I added some cilantro too because, quite frankly, I love cilantro. It was a big hit! We both had seconds!

This was wonderful! We left out the olives since none of our family members like them. I would also leave the rice out next time. You can not really taste it so save one some calories/carbs there!

A great recipe. Love the flavor combos of black beans, southwest spiced chicken, seasonings. Love the pie crust, too.

Even my picky teenage son loves this recipe. I've made it several times. I use brown rice, but you can't taste the rice any way with all the other flavors going on. I have also just seasoned up boiled chicken breasts instead of using the frozen. It quickly comes together and has GREAT flavor! I always serve it with a dollop of sour cream on top.

Super yummy! Easy to prepare, I omitted black olives as I did not have any, and used normal canned corn. Leftovers are fabulous! A new favorite in my house!

This is amazing! My family loved it. We are not rice fans either so we used potatoes instead. For sure will make it again.

I'm not a rice fan, so I microwaved a potato and chopped it to add to the mix in place of rice. I used rotiserrie chicken instead of frozen. It was delicious! Definitely will make it again!

This is a BIG hit in my family. I have children from 7-21 and all enjoyed, even my biggest critic, my husband. I forgot the cheese in the recipe and still they loved it. I will definitely make this again....remembering the cheese! I also plan to include this in my "make and take" menus. I know it will travel well and be a great dinner for others as well.
