substitute the cream cheese for velveeta cheese and take out the sour cream and it makes a great stuffed chicken. tastes great with corn and rice covered in salsa.

One word...SEASONING. In all the years that I've been cooking I should have known to season the chicken breasts. Salt and pepper would have helped a lot. I also had a difficult time rolling the chicken up and keeping the filling inside then trying to dip it in the milk and roll it in the crushed shells without losing even more filling. I ended up with a lot of filling left so I just spooned it in the casserole dish around the rolled up chicken. It really smelled good while baking but the flavor did not meet my expectations. The salsa and sour cream helped but salt and pepper would have helped more. I may try it again but without the filling and rolling. I may just layer the chicken and filling instead and, as I said before, I will season it more. The filling was flavorful though. I think it would make a great dip on its own.

I made this recipe.. somewhat modified to be lower calories.. low fat cheese; plain bread crumbs with the chili powder. almost cut the calories and fat intake by 1/2. great recipe.

Although, it sounds like it would be yummy to eat, the calories, fat (both saturated and trans), and sodium content keeps me from ever making this recipe.

Awesome recipe, if a little labor intensive the first time that you make it. You can save time by using the thin chicken breast that you can buy at the grocery store. I found the spiciness of the jalepenos were perfectly balanced out by the sweetness of the corn and cream cheese in the filling. As a shortcut, I used regular corn tortilla chips crushed for the outside crust. Absolutely awesome, and they reheat very well for leftovers!
