Ingredients

box (7.5 oz) Betty Crocker® Suddenly Salad® ranch and bacon salad mix
1/2
cup mayonnaise or salad dressing
1
package (6 oz) refrigerated cooked fajita chicken breast strips, coarsely chopped
1
can (11 oz) Green Giant® SteamCrisp® Southwestern Style corn, drained
1
cup halved cherry tomatoes
4
oz pepper Jack cheese, cut into 1/2-inch cubes (1 cup)
2
tablespoons chopped fresh cilantro leaves, if desired

  • 1 Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add Pasta. Gently boil, uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water to cool; drain well.
  • 2 In small bowl, combine Seasoning mix from packet and mayonnaise. In large bowl, gently toss seasoning mixture, chicken, corn, tomatoes and cheese until mixed; stir in cooked pasta. Top with cilantro, if desired.

If you like Southwest style dishes, you should try this recipe using the Suddenly Salad Chipotle Ranch mix! I made just a couple of changes - I used Miracle Whip instead of mayo, regular corn, and cheddar instead of jack cheese. Yummmm! With a little more chicken in it, it makes a great main dish.

I made this the other night. I've been buying the Suddenly Salad mixes occasionally for years, so it was nice to see a variation on the basic mix. I added a bit more mayonnaise than was called for, figured with all the extra ingredients, I might want the salad a bit wetter. I've found over the years that these salads tend to dry out a bit in the fridge also, so another reason for a bit of extra mayo. But that was my taste, it can certainly adapt this to your own. Overall, a good recipe. Not something I would make every day, or even every week, but good on occasion. And it makes a LOT !

I have made this and it was wonderful. Nice addition to the weekend BBQ menu. Goes great with burgers. yummy.
