Sopapilla Cheesecake

These sweeties puff like sopapillas and are great for breakfast or as a change from coffeecake!

Okay I'm not going to lie I use ALL the butter it calls for and absolutely LOVE the flavor! The only thing I add is a can of apple pie filling after the cream cheese mixture ;) It is absolutely amazing!!

This sounded like an interesting recipe. I used splenda as I'm diabetic. I love lemon so I added 1/4 cup of fresh lemon juice to the cheese mixture and layered some fresh blueberries on top of the cheese. I only used 2 T of butter and brushed the top crust, then sprinkled with sugar and cinnamon. Next time, I will sprinkle nuts on the top! And there will be a next time!! Delicious!!

@13Kathy13 Use less butter on the top. I just brush a little melted butter and then put the cinnamon sugar on top of that. An entire stick is just way too much.

This was very easy and was DELICIOUS! I didn't use anywhere close to that much butter though. I just brushed the top with melted butter, then sprinkled with sugar and cinnamon before baking.

Kathy~ I made this for the first time today and only used half the butter, also brushed not poured on! It was a hit!!

Help - I just make this for the first time and when I took it out of the oven a river of butter was swirling around on top and the top crust was puffed up in places. What did I do wrong?

It's amazing, really. We sprinkle extra sugar and cinnamon on top, snickerdoodle style. It's hard to wait while it cools. <3
