Ingredients

lb ground turkey breast

teaspoon chili powder

can (14.5 oz) Mexican-style stewed tomatoes, undrained, cut up

flour tortillas (7 inch), heated
1/2
cup shredded reduced-fat Monterey Jack cheese (2 oz)

cup shredded lettuce

Directions

  1. 1 Heat 8-inch nonstick skillet over medium-high heat. Add ground turkey and chili powder; cook 5 to 6 minutes, stirring frequently, until turkey is no longer pink. Stir in tomatoes. Reduce heat to medium; cook 10 minutes, stirring occasionally, until liquid has evaporated.
  2. 2 Spoon turkey mixture evenly down center of each tortilla. Top each with cheese and lettuce. Roll tortillas into cone shape. Wrap 2 sandwiches together securely with foil; take with you for an on-the-go dinner.
