I wasn't a huge fan of the making the marshmallow filling, very sticky and messy. I think to save time I will just use giant marshmallows if I decide to try this again.

Easy recipe but I would add some crushed graham crackers to the cookie before baking along with mixing in some cinnamon into the marshmallow creme. I was even thinking of using crushed graham crackers for the sides of the creme to make it more of a smore type taste.

This recipe brought my teenage son into the kitchen! He enjoyed making them. We all loved these. My sons took them in their school lunches. We made them with giant cookies; one is more than enough for a snack or dessert.
