Easy and delicious. We make this with scallops rather than shrimp sometimes, and it's great. We love the spice of the adobo peppers and fire roasted tomatoes.

I have made this dish many times - even for my husband's boss at a dinner party. It is simple to make, requires minimal ingredients, and is delicious! The corn is a great addition to the grits.

The is a fantastic recipe! I did make a few modifications. I added 2 more ounces of cream cheese and sprinkled some swiss cheese on the finished dish. I also used purple onions instead of green onions. I cooked have of the onions in the grits and the other half with the garlic before added the shrimp. The purple onion enhanced the presentation with more color.
