This dish was amazing and so easy!! I made it with a fajita type dish and it was a hit..enjoyed by the little ones too :) I left out the ranch as I am dairy free and it turned out just fine. I have already had more requests to make it again :) (our family did also end up scooping some into our tacos and it made a great substitution for cheese and sour cream)

Hi. I made this for a friendly get-together just yesterday and everyone loved it! It's appealing to the eye and I did garnish with the lime slices. I doubled the recipe and some people even used this as a dip, like a salsa. I will also say that I'm a bit of a health nut, so I substituted the bacon for smoked turkey bacon and I also used light ranch dressing. It was great! I'm not much into spicy hot foods but this did have a slight kick to it. A little red pepper flake goes a long way! I will definitely make this again.

Excellent recipe for corn. I skipped the cumin and used chili powder and I added 1/4 cup of black beans. It was excellent with mesquite marinated chicken breasts and an avocado salad.

This dish was great! It was fresh and unique and the cilantro gave it a great kick. It had great mexican flavors, and it is now one of my all-time favorite corn dishes. I will definitely be making it again!
