oz. (1 1/2 cups) uncooked rotini (spiral pasta)

tablespoon olive oil

medium onion, cut into thin wedges
1/2
lb. cooked smoked sausage, halved lengthwise, sliced
2
medium zucchini, halved lengthwise, sliced
1
(14.5-oz.) can diced tomatoes, undrained
1/4
teaspoon salt
1/8
teaspoon pepper
2
oz. (1/2 cup) shredded mozzarella cheese

  • 1 Cook rotini to desired doneness as directed on package. Drain.
  • 2 Meanwhile, heat oil in large nonstick skillet over medium heat until hot. Add onion; cook and stir 1 to 2 minutes or until crisp-tender. Add sausage and zucchini; mix well. Reduce heat to medium-low; cover and simmer 6 to 8 minutes or until zucchini is tender.
  • 3 Add tomatoes, salt and pepper; cook 3 to 4 minutes or until thoroughly heated, stirring occasionally. Add cooked rotini; stir gently to mix. Sprinkle with cheese; cover and cook over low heat for 2 to 3 minutes or until cheese is melted.

Expert Tips

This sauce can easily be made in advance and can be doubled. It also freezes well, but wait to add the cheese and pasta until the sauce has been reheated and is ready to serve.
