Smoked Salmon Toast

Ingredients

oz. smoked salmon, minced

oz. (1/2 cup) shredded reduced-fat mozzarella cheese
1/2
cup fat-free mayonnaise or salad dressing
1/4
cup finely chopped red onion

tablespoons drained capers, rinsed

melba toast rounds
Chopped fresh parsley, if desired

Directions

  1. 1 Heat oven to 350°F. In medium bowl, combine salmon, cheese, mayonnaise, onion and capers; mix well. Spread 1 heaping teaspoon salmon mixture on each toast round to cover; place on ungreased cookie sheet.
  2. 2 Bake at 350°F. for 8 to 10 minutes or until thoroughly heated. Sprinkle with parsley.
