Slow Cooker White Chicken Chili with Hominy

cans (15.8 ounces each) great northern beans, rinsed and drained

can (15.5 ounces) white hominy, drained
1
envelope (1.25 ounces) Old El Paso® 40% less-sodium taco seasoning mix
1
can (4.5 ounces) Old El Paso® chopped green chiles
1
can (10 3/4 ounces) condensed reduced-sodium cream of mushroom soup
Sour cream, if desired
Chopped green onions, if desired

Directions

  • 1 Place chicken in 3- to 4-quart slow cooker. Top with remaining ingredients except sour cream and onions.
  • 2 Cover and cook on low heat setting 8 to 10 hours.
  • 3 Before serving, stir gently to break up chicken pieces. Serve topped with sour cream and onions.

Expert Tips

If your family is not fond of hominy, just add another can of great northern beans.

The chicken is placed on the bottom of the cooker where it is hottest because it needs more cooking than the rest of the ingredients.

Drizzle a little lime juice and honey over a plate of sliced oranges, jicama and red onion for a unique Mexican-style salad.

Really liked this recipe. I did bump it up just a bit with a healthy sprinkle of cumin and chili powder. Also, I needed to add at least 2c. chicken broth to keep it from becoming too thick and dry. Even my chili-hating husband said it was "all right".

Use corn instead of the hominy! And try using cream of chicken soup instead of the cream of mushroom if you want to change the recipe up a bit!

WONDERFUL recipe!!! However, instead of using the hominy, I just used plain old corn nibblets and it came out great!!! My hubby and I can't get ENOUGH of this! I make this about 3 or 4 times a month now (since it's winter) and (since it's just the 2 of us) we ALWAYS have leftovers for the rest of the week!! Has such a nice flavor to it!!! The only thing I would change about it though is substitute cream of chicken soup in for the cream of mushroom but that's it! You don't even NEED the chopped green onions in it once it's done since it's just SO GOOD all by itself!!! Definitely a keeper!

Our Wednesday night crock pot dinner group thought this was excellent. It was a "Can Do Again). Used chicken beast tenders instead of thighs.

I also added some chicken broth to the mixture. It keeps the chili from drying out while cooking all day in the crock-pot.
