Slow Cooker Spicy Chicken in Peanut Sauce

Pass small bowls of dry-roasted peanuts and chopped fresh cilantro to sprinkle over the chicken, and serve with wedges of warm pita bread.

large onion, chopped (1 cup)

cans (14.5 oz each) diced tomatoes with green chilies, undrained

can (14.5 oz) crushed tomatoes, undrained

tablespoons honey

teaspoons ground cumin

teaspoon ground cinnamon
1/3
cup creamy peanut butter
2
cups hot cooked couscous

  • 1 In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil about 4 minutes, turning once, until brown.
  • 2 In 4- to-5-quart slow cooker, mix onion, diced and crushed tomatoes, honey, cumin and cinnamon. Add chicken. Spoon tomato mixture over chicken.
  • 3 Cover and cook on Low heat setting 7 to 8 hours.
  • 4 Stir in peanut butter until melted and well blended. Serve chicken and sauce over couscous.

i ADDED LOTS OF FRESH MINCED GARLIC USED 1 CAN OF THE DICED TOMATOES WITH CHILIES (NOT 2) AND 1 CAN OF CRUSHED TOMATOES.. I ALSO GAVE IT A COUPLE OF SQUIRTS OF SRIRACHA SAUCE.

I made this using several recommendations of other reviewers, which were to use more peanut butter, add garlic and make one can of tomatoes one with jalapenos. It came out fabulous! The 1 can of tomatoes with jalapenos gave it just the right amount of heat to balance the peanut butter. I served it over rice, since I was serving a crowd. I also put out bowls of slice almonds and shredded sweet coconut for people to garnish with. The shredded sweet coconut was far by the best garnish of the two, so putting the coconut out for those who like it is my suggestion.

I wish I had read some of the reviews before making this dish. I made it according to the recipe but found it not at all spicy and rather bland. I will spice it up next time.

This was delicious!!! I followed other suggestions and doubled the cumin, cinnamon, and honey and used 1/2 cup of PB. I also used tomatoes with jalapenos and instead of just regular crushed tomatoes I used fire roasted tomatoes for salsa. It was very tasty and so good!

Made this today - a big hit in our house. I could only find the crushed tomatoes in a 28 oz can, so since I doubled that, I also decided to double the honey, cumin, and cinnamon. I kept the diced tomatoes as the recipe said. I also used a 1/2 cup of peanut butter instead of a third. To avoid the possible blandness as some reviewers suggested, I threw in salt and pepper of course plus fresh minced garlic...a lot. Served over couscous. Will definitely make again!
