This was delicious!!! And it was enough for a couple meals for us. The only downside for me was that I didn't drain the juice enough before scooping onto our tortillas so they were dripping EVERYWHERE.

I got this salt-free taco seasoning mix from Pillsbury Classic #85 years ago. Glad to share it:
Homemade Salt-free Taco Seasoning Mix
6 tsp chili powder
5 tsp paprica
4 1/2 tsp cumin
3 tsp onion powder
2 1/2 tsp garlic powder
1/8-1/4 tsp cayenne pepper
7 tsp equals a 1.25 oz pkg

I have not tried this yet... but the salt issue... if you want to use TACO seasoning (or other) look for the TACO seasoning mix with 40% less sodium! I agree EVERYONE eats way too much salt. I am really looking forward to making this recipe!

The suggestion of using a taco or soup mixing packet would add tons of salt to this recipe...all of those premixed packets have way too much salt in them, so using the separate spices is preferred, especially if you are watching your salt intake.

Good recipe but you can save yourself a few steps by buying a packet of your favorite taco or burrito seasoning, rub on pork roast, and pour a can of rotel over (for spicer use hot rotel). This also works great with chicken or beef too.

This was really delicious, so easy to make and made my house smell wonderful. My son is a picky eater and i was doubtful he would like it, but he said it's his new favorite meal. I was concerned that this would be too spicy, but this isn't the case, it was very mild. The next time I make this I will add some more chili power for some extra spice.
