medium green bell pepper, chopped (1 cup)

tablespoons cornmeal

tablespoons chili powder

teaspoons dried oregano leaves

teaspoon ground cumin

lb boneless skinless chicken thighs, cut into 1-inch pieces

jar (16 oz) medium picante sauce
1
can (15 to 16 oz) pinto beans, undrained
1
can (14.5 oz) diced tomatoes, undrained
Sliced green onion, if desired

  • 1 In 3- to 4-quart slow cooker, mix onions, bell pepper and garlic.
  • 2 In large bowl, mix cornmeal, chili powder, oregano, cumin and salt. Add chicken; toss to coat. Add chicken and any remaining seasoning mixture to vegetables in slow cooker. Gently stir in picante sauce, beans and tomatoes.
  • 3 Cover; cook on Low setting 6 to 8 hours. Sprinkle with green onion.

Expert Tips

Chicken thighs, with their higher fat content, are better cooked in the slow cooker than lower fat chicken breasts. Breasts, which become tough and dry with long, slow cooking, are best used in recipes with minimal cooking time.

i MADE THIS CHILI AND & THOUGHT IT WAS DELICIOUS. I FOUND IT TO BE A LITTLE SPICY FOR SOME SO I WILL PROBABLY USE A MILD SAUCE NEXT TIME.

Tasty, better the second day. Despite all the spices on the chicken, not too flavorful. Needed some hot sauce for zing or recommend a spicier salsa. We like our chili spicy hot.

This is the best chili I've ever had!! I've made it twice now and making it a 3rd time tomorrow. Never have any leftovers either. Follow the recipe exactly ..........it is the best !
