I used potatoes O'Brian hashbrownd for mine and added the chopped greenchiles. I also added chopped fresh cilantro jsut before serving to brighten the taste and add a little more bright green color. They were fabulous! Nest time will use chunks of cooked pork roast adn use as main dish..my men love "meat & potatoes" and this fir the bill nicely. Thanks for the great idea...a crockpot is a working womans best friend!!!!!!

This was so good and easy. My husband said I could have it for a side dish any time I wanted. My only problem was finding Mexican corn. Had to make my own. But well worth it.

Good but not crazy for Mexican corn. I will use regular canned corn and possibly mix in 1/2 can cream corn.
